- 2 cups watermelon, cubed
- ½ cup vegan feta*, crumbled
- ½ cup cucumber, peeled and chopped
- 1 lime, juiced
- fresh basil, sliced
In a large bowl, combine the watermelon, cucumber, and basil. Squeeze with fresh lime juice and toss to coat.
Place in the refrigerator until cool.
When ready to serve, top with vegan feta cheese.
