Make It

There’s nothing simpler, or tastier, than home-made pesto. So grab your food processor and whip up a batch of this lemon basil pesto. It’s perfect on pasta, as a topper for roasted vegetables, as a sauce on your favorite vegan burger. You name it, this pesto can do it.

In the bowl of your food processor, add the hemp hearts, nutritional yeast, garlic, basil, 6 tablespoon of lemon juice and salt (optional but recommended). Blend the ingredients until they’re smooth and creamy. You will have to stop and scrape down the sides.

If the pesto is too thick add more lemon juice a tablespoon at a time until you reach your desired consistency.

Ingredients
  

  • ½ cup hemp hearts
  • ½ cup nutritional yeast
  • ½ cup fresh basil, packed
  • 6-8 tbsp lemon juice, divided
  • 5 cloves garlic, minced
  • salt, to taste

Instructions
 

  • In the bowl of a food processor, combine the hemp hearts, nurtitional yeast, fresh basil, 6 tbsp lemon juice, garlic, and salt.
  • Pulse until combined, stopping periodically to scrape down the sides. Add more lemon juice to thin if needed.
