Seriously Creamy Edamame Hummus

Seriously creamy edamame hummus. It’s light, fresh, and simple! Perfect for a last-minute party, it can be thrown together in fewer than 10 minutes. Plus, it doesn’t need any chill time because it’s delicious right out of the food processor. It’s vegan, gluten-free, and oil-free.

This dip is so good. I really don’t even know how to tell you just how good it is. I love hummus. And I’ve had a lot of different flavors. Made many different versions. But I think this just might be my favorite. And here’s why:

Edamame Hummus

One of the reasons why I love hummus so much is because it’s so simple to make. Plus, fresh hummus is so much better than store-bought. If you’ve never tried making it at home you need to. And this is the best hummus recipe to start with because it’s so simple. And so delicious.

In the bowl of you food processor add the shelled edamame, avocado, garlic, lime juice, and salt. Blend the ingredients until it’s relatively smooth. Stop periodically to scrape down the sides with a rubber spatula.

Add the runny tahini and blend. The mixture will form a ball and become thick and stiff. That’s ok. Just blend until the tahini is incorporated then scrap down the sides.

With the lid on and the blade running, drizzle in the water. Start with ⅓ of a cup and continue adding more water until the hummus is smooth and creamy. If your tahini was thick and dry, you’ll need to add more water to thin. If your tahini was runny and creamy, you might not need to add any more.

Serve your finished hummus immediately with chips and veggies. Or chill and serve cold. You can also totally use this a spread on your favorite veggie sandwich. Or smear it on a tortilla, top with vegan cheese and another tortilla and you’ve got a totally unique quesadilla.
