Vegan Green Goddess Dressing

I don’t know about you guys, but it’s been HOT here. Aside from my energy being zapped in the afternoon I feel like my brain has been a bit fuzzy as well. With my kiddo starting first grade a few weeks ago we’re still getting into the swing of things. Distance learning has not been my friend so far and so dinners have become an afterthought. That’s when having this simple little sauce comes in handy.

Make It

Honestly, sauces are one of my favorite things to make because you could potentially make the same thing every day but as long as the sauce is different, you will have a totally new meal each time. And this dressing is no different.

In the bowl of your food processor add the avocado, lime juice, lime zest, parsley, green onions, capers, dijon mustard, and aquafaba (the brine from a can of white beans). Blend the ingredients together until they are smooth. You may need to stop the blade a few times to scrape down the sides. Now, depending on what you are using the dressing for, you can either:

  • Leave it relatively thick to coat a pasta or
  • Add water a few tablespoons at a time to thin it out for a salad dressing.

Ingredients
  

  • 1 avocado
  • 1 lime, zest and juiced
  • 1 handful parsley
  • 3-4 green onions
  • 1 tsp capers
  • 1 tsp dijon mustard
  • ΒΌ cup aquafaba, bean brine

Instructions
 

  • Place all ingredients into a food processor and blend until smooth. Drizzle in water, 1 tbsp at a time, as needed to thin.
  • Keep it thick to coat pasta, thin it out to use as a salad dressing.
