Lemon Basil Pesto
A light, fresh, creamy, 5-ingredient lemon basil pesto that is perfect for the warm summer months. Make the sauce while the pasta cooks and you'll have dinner done in about 15 minutes. It's vegan, oil-free, nut-free.
- ½ cup hemp hearts
- ½ cup nutritional yeast
- ½ cup fresh basil, packed
- 6-8 tbsp lemon juice, divided
- 5 cloves garlic, minced
- salt, to taste
In the bowl of a food processor, combine the hemp hearts, nurtitional yeast, fresh basil, 6 tbsp lemon juice, garlic, and salt.
Pulse until combined, stopping periodically to scrape down the sides. Add more lemon juice to thin if needed.
